"Cafe Granja La Esperanza" is a worldwide-known group of small Colombian farms put together by Luis Herrera, and now owned by his son Rigoberto. Over the years, the Herreras' work has become a reference for innovation, quality and ethics on the international coffee scene, and the Pacamara they grow in Las Margaritas is one of the flamboyant ambassadors of this family's quality standards.
This precious varietal is grown on almost 34 hectares of Las Margaritas farm. It is know as a rare varietal since the trees only give a small amount of fruits that are rigorously hand-picked by workers paid hourly (against the standard weight rate). After being carefully selected, the cherries are depulped without water and fermented for up to 22 hours. Las Margaritas' drying process is the result of years of research, investments and experiments that aimed at reducing the water use and protecting the environment hence ensuring the sustainability of an ethic and eco-friendly production.
